In the Beginning
There was cheese.
Oh wait.... No there wasn't.
In the beginning, there were cows.
...and sheep.
...and goats.
...and dogs.
Ok, to Americans the dogs thing might be gross. But hey, they lactate, don't they? I bet somewhere in the world they make cheese from dog's milk. Let's not be so ethnocentric, eh?

Dairy-Free Rice Pudding
Have you ever been disappointed at how easy a substitution was made? So often ease isn't something I worry about when re-inventing a recipe. Granted, I had already defined the proper egg substitute, and when it comes to puddings the eggs really are the hardest ingredients to sub just right. Also, for any of you new to a dairy/ casein allergy, coconut milk is a wonderful substitute for cow's milk! I used 14oz of coconut milk and 1/2c Rice milk to sub out the 2 1/2 cups cow milk.Tips & Tricks: dairy sub - Coconut milk can often be substituted for cow's milk in a recipe where it is heated to cause reduction. Soy and rice milk generally do not reduce correctly and will not set up as needed for puddings and sauces. They also do not scald. Coconut milk can be used in place of the cow's milk in "cook & serve" pudding mixes. I have heard of it being used in "instant" type mixes, but have never tried it. Add water to make 2 cups if you are using a 14oz can.
